With tender meat and a mild, somewhat nutty flavor, the Rainbow Trout has become a particularly popular fish. Their unique coloring comes as a result of their astaxanthin levels. This astaxanthin is a naturally produced and powerful antioxidant. One thing to consider is that, just like the difference between steak and veal, the larger the Rainbow Trout, the more flavor it will have. Often crusted and pan fried, this trout is also baked and grilled.
